The Chalk Stream Range
Chalk Stream is the brain child of John who together with his two sons are passionate about their fly fishing. The idea came to him at an interclub Fly Fishing weekend at Lithgow.
He is producing a series of wines each named after a Fly. The first fittingly is the Bredbo Blend since the Bredbo is acknowledged as the first known Australian fly. The Bredbo Blend' Matuka Merlot and the Caddis Cabernet are available now. These ultra premium wines are sourced from award winning vineyards around the country in small parcels which are aged in John’s own hogsheads at Gresford. The packaging is designed and illustrated by Peter Leuver author of Fur and Feather.
In each series there is a collectors pack consisting of an individually numbered 750ml bottle of the wine in a black silk lined box with a leaflet replica of Peter’s fly box containing information about the fly and an example tied by Robert Moss. There are a maximum of 500 collectors packs in each series.
The wine is also available in a six pack for storage and drinking.
The Bredbo Blend, Matuka Merlot and the Caddis Cabernet will be followed by a Muscat.

The collectors pack is $36.00 (Incl. GST) each+ postage and the 6 pack is $150.00(Incl. GST) + postage.

of South Australia, the Bredbo Blend is a superb blend of Cabernet Savignon, Merlot and Petit Verdot aged in French Oak.


MATUKA MERLOT

The Matuka Merlot hails from the famous "terra rossa" soil area of the Coonawarra in South Australia. The deep plum red colour leads to bouquet redolent of plum and raspberry jam, with a densely flavoured blackberry palate that finishes with soft tannins and fine French Oak. Vigneron John Evers commissioned Peter Leuver to design the labels and presentation for the series. Every bottle in the Collector Packs is individually numbered and comes with a current tie of
the Bredbo or Matuka Fly.
Available only in limited quantities through mail order and selected fishing lodges in Australia and New Zealand, and Vintage Cellar stores.

CADDIS CABERNET
Also fom the famous 'terra rossa' soil area of the Coonawarra in South Australia, Caddis Cabernet is dark plum crimson in colour and exhibits regional character with black currant and cassis aromas and tomato leaf notes with a classy backbone of cedary French oak. The palate is rich and full bodied with luscious berry flavours underpinned with vanillin oak and finishes with silky and drying tannins.
